Warm Three-Bean & Halloumi Salad

Ingredients:
- 400g chickpeas, drained and rinsed (5771)
- 400g butter beans, drained and rinsed (4551)
- 400g black beans, drained and rinsed (26824)
- 200g halloumi, sliced (8058)
- ½ red onion, finely chopped (2002)
- 1 cucumber, diced (850)
- 1 handful cherry tomatoes, halved (2610)
- 2 tbsp olive oil (11072)
- 1 tbsp lemon juice (22001)
- 1 tsp honey (17109)
- ½ tsp salt (23026)
- ½ tsp black pepper (8288)
- ½ tsp cumin (8413)
- 1 handful fresh parsley or coriander (2106/2738)
- 50g grated cheddar cheese (9097)
Method:
- Sear the Halloumi: Heat 1 tbsp olive oil in a pan over medium heat. Add halloumi slices and cook for 2 minutes on each side until golden brown. Remove and set aside.
- Prepare the Salad: In a large bowl, mix chickpeas, butter beans, black beans, red onion, cucumber, and cherry tomatoes.
- Make the Dressing: In a small bowl, whisk together 1 tbsp olive oil, lemon juice, honey, salt, pepper, and cumin.
- Combine Everything: Pour the dressing over the bean mixture and toss well.
- Top with Cheese: Place the warm halloumi on top, then sprinkle grated cheddar over everything.
- Garnish and Serve: Sprinkle with fresh parsley or coriander and enjoy warm!
