Warm Three-Bean & Halloumi Salad

Ingredients:

  • 400g chickpeas, drained and rinsed (5771)
  • 400g butter beans, drained and rinsed (4551)
  • 400g black beans, drained and rinsed (26824)
  • 200g halloumi, sliced (8058)
  • ½ red onion, finely chopped (2002)
  • 1 cucumber, diced (850)
  • 1 handful cherry tomatoes, halved (2610)
  • 2 tbsp olive oil (11072)
  • 1 tbsp lemon juice (22001)
  • 1 tsp honey (17109)
  • ½ tsp salt (23026)
  • ½ tsp black pepper (8288)
  • ½ tsp cumin (8413)
  • 1 handful fresh parsley or coriander (2106/2738)
  • 50g grated cheddar cheese (9097)

Method:

  1. Sear the Halloumi: Heat 1 tbsp olive oil in a pan over medium heat. Add halloumi slices and cook for 2 minutes on each side until golden brown. Remove and set aside.
  2. Prepare the Salad: In a large bowl, mix chickpeas, butter beans, black beans, red onion, cucumber, and cherry tomatoes.
  3. Make the Dressing: In a small bowl, whisk together 1 tbsp olive oil, lemon juice, honey, salt, pepper, and cumin.
  4. Combine Everything: Pour the dressing over the bean mixture and toss well.
  5. Top with Cheese: Place the warm halloumi on top, then sprinkle grated cheddar over everything.
  6. Garnish and Serve: Sprinkle with fresh parsley or coriander and enjoy warm!
