Kumato Tomatoes
Kumato Tomatoes ripen from the inside out, their colour changing naturally from dark brown to a golden green. They are juicy with a firm texture – extraordinarily sweet, with a complex flavour, which is succulent and also slightly tart.
Lotus Root
Lotus root is a must-try! The pinwheel-patterned flesh of these vegetables is crisp, subtly sweet, and earthy-flavoured. Once cooked, their gentle flavour makes them ideal for use in both sweet and savoury recipes.
Koppert Oyster Leaf
Oyster Leaves have a slight salty taste that highly resembles oysters and are therefore often referred to as Vegetarian Oysters. Combined with fish dishes, they are an interesting addition to the ingredients already available. Oyster Leaves can be used to lend a salty taste. They are excellent in surf and turf dishes, for instance. But they also make a challenging addition to coffee or chocolate.
Cime Di Rappa
Cime di rappa literally translated as turnip tops is a green with edible stems, leaves and flowers. The taste, similar to the one of broccoli, is very pleasantly bitter and slightly nutty.
Radish Meat – Blue, Red, Green
The Red Radish Meat has the flavour of ramen ash mixed with watermelon and this makes for a soft not spicy radish. Green Radish Meat texture is crisp and juicy, and the flavour is fresh with a hint of spice. Blue Radish Meat has a sweet, slightly spicy, flavour is similar to that of black radish.
Chanterelle Mushrooms
Boasting a complex flavour profile; a delicate balance of earthiness, nuttiness, and a slight hint of fruity apricot. The texture of chanterelles is also noteworthy – tender yet meaty, making them an excellent addition to a wide variety of dishes.
