Steve Shore coaches City of Bristol College students!
For those that don't already know Steve Shore is our in-house development chef...
Not only is he incredible in the kitchen, Steve goes above and beyond to help the next generation of chefs. We recently had the privilege of attending an extraordinary culinary event at City of Bristol College where a group of exceptional students embarked on creating the menu for the last gourmet dinner of the academic year - The day/evening was led by Steve and supported by lecturer Ryan Fernandes.
Steve guided the students and helped them create some incredible dishes that formed part of a menu bursting with seasonal staples. Speaking on the menu Steve said "Everything relates to seasonality, today we are using Asparagus, Broad Beans and Peas and Peas with are all in season at this time of year. Of course, Asparagus has a very short season so we're using that now and then we're adding other little components like Mousseline which I have introduced to give the students an idea of how to use different ingredients to stand out".
Steve started out his career at the age of 17 as a commis chef and has since worked his way up the hospitality ladder in some of the finest country house hotels in the country. After learning everything he possibly could in the kitchen he took a leap and bought his first restaurant, The Moody Goose in Kingsmead Square, Bath - It was here that Steve achieved his first Michelin star! He has built up a wealth of knowledge thanks to his years in the trade, he has learnt new skills and culinary styles from some of the most talented chefs and in his own words, is keen to share them with the students.
