Buckwheat Blinis

Kick off your party with these delicious Buckwheat Blinis. They're the perfect way to start a festive celebration or serve them as nibbles at a drinks party!

Buckwheat Blinis


  • 100g buckwheat flour
  • 100g plain flour
  • 2g salt
  • 25g caster sugar
  • 1 pt full fat milk
  • 4 x eggs separated
  • 15g fresh yeast


  1. Combine the flours, sugar, and salt. Add the yolks and warm milk reserving a little to dissolve the yeast and then add to the mix.

  3. Heat a non-stick frying pan with a little oil and spoon in a pool of the blinis mix.
  4. Brown lightly on one side then turn over serve immediately once cooked.

Serve with fillings of your choice – Steve chose to fill with Pastrami, Emmental Cheese & Tomato topped with Cornichons.
