Kick off your party with these delicious Buckwheat Blinis. They're the perfect way to start a festive celebration or serve them as nibbles at a drinks party!
- 100g buckwheat flour
- 100g plain flour
- 2g salt
- 25g caster sugar
- 1 pt full fat milk
- 4 x eggs separated
- 15g fresh yeast
- Combine the flours, sugar, and salt. Add the yolks and warm milk reserving a little to dissolve the yeast and then add to the mix.
- Whisk the whites and fold in
- Heat a non-stick frying pan with a little oil and spoon in a pool of the blinis mix.
- Brown lightly on one side then turn over serve immediately once cooked.
Serve with fillings of your choice – Steve chose to fill with Pastrami, Emmental Cheese & Tomato topped with Cornichons.
