Cherry & Mint Sorbet
A delicious sorbet to serve this summer alongside desserts!

Ingredients:
- 300g Fresh Cherries
- 2 tbsps Lemon Juice
- A handful of mint leaves
- 3 tbsps Honey
- 75ml Water
- 75ml Coconut Milk
- A sprinkle of Salt
Method:
- Firstly, take all of your ingredients and blend them together either using an electric whisk and a bowl or in a blender. Start relatively slow and then slowly begin to speed up. The cherries will become smooth and you’re after a thick, creamy consistency.
- Now, place the mixture into a container and place in the freezer and let it freeze, leave it for around 3 hours or overnight.
- To serve, remove from the freezer and leave it at room temperature for around 15 minutes and then scoop out, top with a single mint leaf or a cherry for extra decoration!
