Damson Jam
A fruity, sweet-tart damson jam

Ingredients:
- 550g Damsons
- 550g Golden Caster Sugar
- 130ml Cold Water
Method:
- Clean your damsons and then halve them all, taking out all of the stones from the centre.
- pour them into a large saucepan and add in your water, put them on a medium-high heat and leave for around 10 minutes until you create a puree like texture.
- Next, pour the sugar in and continue to stir until it has dissolved, now raise the heat and bring your mixture to a boil. Stir often and continue to do so for roughly 10 minutes.
- Finally, take the saucepan off the hob and leave to stand for 5-7 minutes, then pour into your jam jars or storing pots. Store in the fridge and serve with desserts or on toast & scones!
