Falafel & Houmous Salad Bowl

Ingredients:
200g white quinoa, rinsed, drained (code: 29003)
1 tbsp olive oil (code: 8002)
150g Sugar snaps, trimmed, thickly sliced (code: 1437)
200g Tenderstem Broccoli (code: 35063)
Abunoor Falafels (code: 14112)
Abunoor Pitta (code: 28910)
Houmous to serve (code: 13144)
Honey-herb dressing
2 tbsp olive oil (code: 8002)
2 tbsp lime juice (code: 22017)
1 tbsp honey (code: 8876)
1 tbsp finely chopped coriander (code: 2738)
1 tbsp finely chopped mint (code: 2704)
Method:
Place the quinoa and 500ml water in a medium saucepan over high heat. Bring to the boil. Reduce heat to low. Cover and simmer for 15 mins or until the liquid is absorbed. Remove from heat. Use a fork to separate the grains.
Steam the Sugar Snaps and Broccoli. Refresh under cold water. Drain well.
To make the honey-herb dressing, combine the oil, lime juice, honey, coriander and mint. Mix until well combined & season.
Divide quinoa among serving bowls. Top with Falafel, sugar snaps, broccoli, and any other salad & veggies of choice. Serve with a pot of your favourite Hummus & drizzle with your dressing.
