Feuilleté of Heritage Tomato Fondue, Goats Cheese, Basil Oil, sliced Tomatoes & Sea Salt

Ingredients:
- Heritage Tomatoes (Code 35071)
- Fresh Garlic
- Round Shallots
- Granulated Sugar
- Goats Cheese Log
- Rolled Puff Pastry
- Fresh Basil Oil
Method:
- For the fondue – braise the heritage tomatoes, garlic and shallots with a little sugar until cooked down to a thick pulp, once formed put through a sieve to remove excess juice.
- Slice the goats cheese.
- Roll out the puff pastry and cut into a rectangle pillow, bake until golden brown.
- To assemble, cut the puff pastry in half, layer with tomato fondue, goats cheese and sliced tomatoes.
- Put through the oven for 2-3 minutes to soften the goats cheese.
- Finish with a drizzle of fresh basil oil and micro shoots.
