Baked Focaccia, Ham, Camembert, Cranberry, and Rocket Sandwich
This warm and gooey sandwich combines the creamy richness of Camembert with the sweet-tart flavour of cranberry sauce and the peppery bite of rocket, all held together by crispy focaccia!

Ingredients:
- 1 large piece of focaccia bread (I used Hobbs house )
- 1 wheel of Camembert cheese (about 8 ounces)
- 125g cranberry sauce
- Fresh rocket
- Olive oil for brushing
- Salt and pepper to taste
- Honey roast gammon
Method:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Focaccia:
- Cut the focaccia bread into sandwich-sized pieces. If it’s very thick, you might want to slice each piece in half horizontally.
- Assemble the Sandwiches:
- Spread a generous layer of cranberry sauce on the bottom half of each focaccia piece.
- Add a layer of sliced gammon
- Slice the Camembert cheese
- Top with a handful of fresh rocket (arugula).
- Place the top half of the focaccia over the rocket.
- Brush with Olive Oil:
- Lightly brush the outside of each sandwich with olive oil to help it crisp up in the oven.
- Season with a little salt and pepper if desired.
- Bake the Sandwiches:
- Place the assembled sandwiches on a baking sheet.
- Bake in the preheated oven for about 10-15 minutes, or until the focaccia is golden and crispy, and the Camembert is melted and gooey.
- Serve:
- Remove the sandwiches from the oven and let them cool for a minute or two before serving.
- Cut each sandwich in half if desired and enjoy while warm
