Baked Focaccia, Ham, Camembert, Cranberry, and Rocket Sandwich

Ingredients:

  • 1 large piece of focaccia bread (I used Hobbs house )
  • 1 wheel of Camembert cheese (about 8 ounces)
  • 125g cranberry sauce
  • Fresh rocket
  • Olive oil for brushing
  • Salt and pepper to taste
  • Honey roast gammon

Method:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Focaccia:
    • Cut the focaccia bread into sandwich-sized pieces. If it’s very thick, you might want to slice each piece in half horizontally.
  3. Assemble the Sandwiches:
    • Spread a generous layer of cranberry sauce on the bottom half of each focaccia piece.
    • Add a layer of sliced gammon
    • Slice the Camembert cheese
    • Top with a handful of fresh rocket (arugula).
    • Place the top half of the focaccia over the rocket.
  4. Brush with Olive Oil:
    • Lightly brush the outside of each sandwich with olive oil to help it crisp up in the oven.
    • Season with a little salt and pepper if desired.
  5. Bake the Sandwiches:
    • Place the assembled sandwiches on a baking sheet.
    • Bake in the preheated oven for about 10-15 minutes, or until the focaccia is golden and crispy, and the Camembert is melted and gooey.
  6. Serve:
    • Remove the sandwiches from the oven and let them cool for a minute or two before serving.
    • Cut each sandwich in half if desired and enjoy while warm
