Gooseberry & Blueberry Tart
A simple dessert, perfect to serve this spring!

Ingredients:
- 270g Blueberries
- 160g Gooseberries
- 200g Plain Flour
- 100g Sugar
- 2 Tablespoons Cornstarch
- 105g Unsalted Butter
Method:
Firstly, preheat your oven to 180°C. Mix together your flour and butter in a large bowl until you create a crumbly mixture. Add drops of water and continuously mix until you have created a dough.
Place your dough onto a floured surface and mould it into a circular shape, then cover with cling film and put it in the fridge for around 30 mins.
Next, place the dough back onto the floured surface and roll out until it is large enough to cover your tart pan. You can remove any extra dough left over.
In a new bowl, combine your cornstarch and sugar. In another new bowl, mix together the berries and then pour the berries into the cornstarch and sugar bowl. Mix it all together until everything is evenly spread, then pour into the tart crust and put it in the oven for roughly 30-40 mins. When cooked, the filling should be bubbly, and the crust should be golden-brown.
Remove and leave to cool, then serve alone or with ice cream!
