Graffiti Aubergine with Small Heritage Vine Tomatoes, Chickpeas and Garlic

Ingredients:

  • One vine of exotic mix small heritage vine tomatoes
  • 2 Graffiti aubergines
  • 1 Red Onion
  • 3 Garlic cloves
  • 60g  Chickpeas
  • 2 tbsps Olive Oil
  • 1 tbsp Garlic Granules

 

Method:

  • Set your oven to 200 degrees.
  • Take all of the tomatoes off the vine and place them onto a oven safe tray, then pour a small amount of olive oil over them and cook them in the oven for roughly 20 minutes, until they are soft and slightly burst.
  • Wash your graffiti aubergines and then cut them into quarters and then brush with oil and sprinkle with garlic granules evenly. Place these under a grill for roughly 5 minutes each side until they are slightly soft.
  • In the meantime, take a saucepan and fill with olive oil, garlic cloves, chickpeas, tomatoes and red onions. Cook these together, stirring often, on a medium heat for around 10 minutes.
  • Remove your aubergines from the grill and distribute onto your plates, then top each one with the topping mixture, and serve!
