Honey Roast & Glazed Ham

Ingredients:

For the Glaze:

  • 250g  honey
  • 125g brown sugar
  • 65g  Dijon mustard
  • 65g cup apple juice

Method:

  1. Prepare the Ham:
    • Preheat your oven to 165°C
    •  Score the fat in a diamond pattern with a sharp knife, being careful not to cut into the meat
  2. Bake the Ham:
    • Place the ham on a rack in a large roasting pan, flat side down I used a 2.5kg piece
    • Cover the ham loosely with aluminium foil and bake in the preheated oven for 2 .5 hours approx (30min per 500grms)
  3. Prepare the Glaze:
    • While the ham is baking, combine the honey, brown sugar, Dijon mustard, apple cider vinegar, and ground cloves in a saucepan.
    • Bring the mixture to a simmer over medium heat, stirring occasionally, until the sugar has dissolved, and the glaze is smooth. Remove from heat and set aside.
  4. Glaze the Ham:
    • Remove the foil from the ham and brush a generous amount of the glaze all over the ham.
  5. Roast the Ham:
    • Return the ham to the oven and bake, uncovered, for an additional 15-30 minutes, basting with more glaze every 10 minutes. The ham should develop a deep, caramelized colour.
  6. Rest and Serve:
    • Remove the ham from the oven and let it rest for about 10-15 minutes before carving.
