Pea, Bacon & Halloumi Salad

Ingredients:

  • 250g fresh peas
  • 6 slices of smoked bacon
  • 3/4 red onion, slices
  • 150g halloumi
  • salt & pepper
  • 5 cherry tomatoes, sliced
  • 2 tbsp white vinegar
  • 2 tbsp mayonnaise
  • sprinkle of paprika & parsley

Method:

  • Using a large frying pan, fry all of the smoked bacon until crispy, and fry the halloumi until it becomes golden brown. Cut both into small pieces and put aside.
  • In a bowl, combine the fresh peas, res onion, salt and pepper, cherry tomatoes, white vinegar, mayonnaise, paprika & parsley. then add in your halloumi and bacon and mix everything together until it’s all evenly spread out.
  • Serve as a side salad or as a light-main, summery dish!
