Thai Dragon Fruit & Lychee Salad

Ingredients:

  • 1 Dragon Fruit, Diced – 25
  • 120g of Lychee Fruit, peeled, pitted and sliced – 1424
  • 120g Honeydew Melon, diced – 5468
  • 2 Tablespoons Lime Juice – 22017
  • 2 Teaspoons of Honey – 17117
  • Basil Leaves – 307578
  • 1/2 Teaspoon Ground Ginger – 8423
  • 1 Teaspoon Dry Roasted Peanuts crushed – 8652

Method:

  • Whisk together: ginger, lime juice and honey.
  • Mix all of the diced fruit together along with the basil leaves, slowly add the previously made dressing.
  • To serve, use a hollow dragon fruit as a bowl or a regular dish. Sprinkle the crushed peanuts on top to finish.
